Seafood Quiche

Ingredients

3 cups chopped fresh spinach
2 T water
1 medium onion, diced
3 T butter
½ cup (3 oz.) scallops
½ cup (3 oz.) raw shrimp, peeled and diced
½ cup (3 oz.) cod, haddock or other white fish, cooked, diced
4 eggs
2 cups heavy cream or half & half
1 t Crystal Steak Sauce
1 t Crystal Hot Sauce
1 t Crystal Buffalo Sauce
9-inch deep-dish pie shell, partially baked

Directions

Bring spinach and water to a boil in a covered saucepan. Let cook 1 minute, drain and cool. Sauté onion in butter in an 8 inch skillet until caramelized. Add scallops and shrimp, cook until shrimp are pink. Add fish and cooked spinach. Drain excess liquid. Mix eggs with Crystal Hot Sauce, Crystal Buffalo Sauce, cream and Crystal Steak Sauce, beating well until blended. Carefully spread seafood-spinach mixture into pie shell, then pour cream sauce mixture over seafood. Bake at 350 degrees for 45 minutes, or until knife inserted in center comes out clean. Serves 4.
